RELISH YOUR RELISHES

The dictionary explanation of relish is to enjoy, take pleasure in, have gusto, and zest. We serve relishes just for that purpose - to give greater pleasure to our family/guests and to add zest and gusto to our entrees. Relishes should add to but never take over. They should enhance but never completely hide whatever we are serving.

Easy Home Made Hot Garlic Dill Pickles

Years ago in Sacramento, California, I ran across an old man selling pickles at a swap meet. He made the pickles in his own kitchen in large plastic barrels and sold them on week-ends. I went to this swap meet every Saturday all during the summer and noticed the lines of people gathered in front of his booth, but I always walked by.

Then, one Saturday, I stopped. He had many types of home made pickles, with bite-sized samples of the various pickles laid out for tasting. They were all good but when I tried the Hot, Garlic, Dill Pickle... I was hooked. So, for what would have been the equivalent of about six dollars in today's money, I bought a quart of pickles served up in a cardboard Chinese take-out carton. They were the absolute, best pickles I had ever tasted.

The true history of the pickle is somewhat of a mystery. Although some believe it dates back to India 4030 years ago. The pickle has been mentioned in the Bible by Jesus and in the Old Testament books Numbers and Isaiah. Napoleon valued its health benefits for his army. George Washington had a collection of 476 different kinds of pickles. In 850 BC Aristotle praised the healing benefits of the pickle, and Thomas Jefferson wrote: “On a hot day in Virginia, I know nothing more comforting than a fine spiced pickle, brought up trout, like from the sparkling depths of the aromatic jar below the stairs of Aunt Sally’s cellar.”

So, what is all the fuss over a pickled cucumber you ask? Who knows…I do know that even today the popular pickle is everywhere. The crunchy tangy pickle is eaten out of jars, on our burgers, and served with our sandwiches. It is sliced, speared, whole, diced for relish, spicy, sour, and sweet.
