Ingredients:

1-cup Sour Cream,

10 3/4-ounces Fiesta Nacho Cheese soup,

2-cups Tomatoes, chopped,

2-cups Refried beans,

1-cup Green chilies, diced with juice,

8-ounces Lasagna noodles, no-boil,

1/2-cup Ripe olives, pitted & sliced, drained,

3-cups Cheddar cheese, shredded,

1-large Green bell pepper, chopped,

1-large Red bell pepper, chopped,

1-teaspoon Salt.

Instructions:

Preheat oven to 350°. Combine soup, salt, and sour cream in a medium bowl. Combine tomatoes, beans and chilies in another medium bowl. Spread 1/2-cup sour cream mixture over bottom of greased 9x13-inch pan; place 3 noodles on top. Spread 1 1/2-cups bean mixture over noodles; sprinkle olives over bean mixture layer and top with 1 cup of cheese. Place 3 noodles over cheese; spread 3/4-cup sour cream mixture over noodles; top with green bell pepper and 1 cup of cheese. Spread remaining bean mixture over noodles. Place 3 noodles over bean mixture; spoon remaining sour cream mixture and sprinkle with red bell pepper and remaining cheese. Cover with aluminum foil and bake for 45 minutes. Let stand with cover for 10 minutes before cutting.

Serves 8

Note: If you like it spicy just add two teaspoons of crushed red pepper or substitute two jalapenos for the green bell pepper. Make sure the jalapenos are medium to hot.
