The Easy Way to Make Healthy Yummy Muffins

This recipe is especially designed for you people that want to eat tasty yummy muffins for breakfast, in your lunches or include in your nearest and dearests' diets. It's versatile as I've included variations for taste preference.
Do you ever get tired of reading labels and being disappointed in all the crappy ingredients? That's a great reason to turn on the oven and these will be ready with 5 to 7 minutes effort! The best thing is they're full of incredibly healthy stuff that your body loves. They're kinda sneaky muffins actually cause nobody would ever suspect there's no sugar in them!
Note: I use organic ingredients because I'm lucky enough to have a store where the bulk prices are a downright good deal. There's other reasons too that I go for organic but not the time or the place.............(see other articles)
TASTY YUMMY BRAN MUFFINS
INGREDIENTS:
Makes a dozen!
Set oven to 400 degrees.
Use 2 cups of the following ingredients: Minimum 1 cup of oat or whole wheat bran or a combination of each plus;
Wheat germ
Coconut To equal 2 cups
1 1/2 cups skim/low fat milk or 1 1/2 cups water & 2 or 3 tablespoons of dried milk or dried buttermilk.
2 eggs
1/2 cup molasses
1/4 cup liquid shortening (canola - a good fat!)
2 cups whole wheat flour
1/2 teaspoon ginger
2 tablespoons ground flax seed (I grind it with my coffee grinder - 10 seconds, done)
1 tablespoon baking powder
1 cup raisins or dried cranberries or some of each
METHOD:
Combine bran(s)/coconut/wheat germ with milk or water/buttermilk powder; let stand until most of the moisture is taken up. Add eggs, molasses and oil and beat well.
Stir together flour, flax seed, ginger and baking powder. Add raisins & or cranberries. Add to above mixture, stirring only until combined .
Fill greased muffin tins. Bake 20 minutes. Check with a toothpick. When it comes out without anything sticking to it and you see that the muffins are separating from the edges and they're a nice color, they're done! If you're making these you've probably made a few muffins before, so you know what you're doing.
