Sticky Nut Rolls Recipe

Ingredients

1/2 cup light corn syrup or maple-flavored syrup
1/3 cup packed brown sugar
3 tbsp butter or margarine, melted
1 tbsp water
1/3 cup coarsely chopped pecans or walnuts
2 cups all-purpose flour
1 tbsp baking powder
1/2 tsp salt
1/3 cup shortening
3/4 cup milk
1/4 cup granulated sugar
1/2 tsp ground cinnamon
Oven 425 degree

Method:

- In a saucepan combine syrup, brown sugar, butter or margarine, and water.
- Cook and stir over low heat till brown sugar is dissolved; do not boil.
- Spread in bottom of a 9x9x2-inch baking pan.
- Sprinkle nuts over.
- In a mixing bowl stir together flour, baking powder, and salt.

- Cut in shortening till mixture resembles coarse crumbs.
- Make a well in center. Add milk all at once, stirring just till dough clings together.
- Turn dough out onto a lightly floured surface.
- Knead dough gently 15 to 20 strokes.
- Roll into a 12x10-inch rectangle.
- Combine granulated sugar and cinnamon; sprinkle over dough.
- Roll up jelly, roll-style, beginning with long side.
- Slice into 1-inch pieces.
- Place, cut side down, in prepared pan.
- Bake in a 425 degree oven 30 minutes or till golden.
- Loosen side and invert onto a serving plate.
- Serve warm.
- Make 12 rolls.

Orange Stick Rolls:

- Prepare stick nut rolls as above, except in the saucepan substitute 3/4 cup granulated sugar for the brown sugar.
- Stir in the butter or margarine, one tablespoon finely shredded orange peel and 2 tablespoons orange juice.
- Omit the water.
- Bring mixture to boiling over medium heat; cook and stir 1 minute.
- Set aside 2 tablespoons orange mixture, pour remainder into and 8x8x2-inch baking pan.
- Omit nuts.
- Continue as directed above for dough.
- Roll dough up into a 12x9-inch rectangle.
- Spread dough with reserved orange mixture.
- Mix the quarter cup with granulated sugar and cinnamon; sprinkle over dough.
- Roll up; slice into 9 pieces.
- Arrange in pan.
- Bake about 20 minutes or till golden.
- Makes 9.
