Top 5 Camping and RVer Recipes
There are many wonderful and tasty recipes you can make while on the road or camping. Read on for some tasty ideas that won't bust your budget.
Apple Bacon Popovers
Ingredients:
2 strips turkey bacon
1 large apple
2 large eggs
2 large egg whites
2 cups 1% milk
2 cups all-purpose flour
2 tsp sugar
1 tsp salt
1 tbsp light, unsalted butter, melted
Cooking spray
Apple butter
Method: Whisk together egg and egg whites in a large bowl until well blended. Whisk in milk and set aside. Mix flour, sugar and salt in a medium bowl. Slowly add flour mixture to egg mixture, stirring well with a whisk. Let stand 30 minutes. Preheat oven to 450 degrees, and cook bacon strips until crispy. Drain, let cool, and finely chop. Coarsely grate apple, including peel. Coat a 9-cup popover pan with cooking spray. Fold the bacon, grated apple and melted butter into batter, stirring until well blended. Pour batter into popover cups until 3/4 full, and bake at 450 degrees for 18 minutes. Reduce heat to 325 degrees and bake for 10 minutes more. Serve immediately with apple butter.
Chicken With Citrus-Garlic-Ginger Sauce
Ingredients:
3 1/2 lbs chicken parts, de-jointed and breasts de-boned
Salt
Black pepper
3-4 tbsp coconut oil
1 tbsp minced garlic
1 tbsp fresh ginger
1 tbsp lemon zest
1 tbsp lime zest
1 cup chicken stock
Method: Season chicken pieces on both sides with salt and pepper to taste. Brown chicken pieces in 2 tbsp coconut oil and set aside. Add garlic, ginger and zests to pan, tossing until softened and fragrant. Deglaze pan with chicken stock, return chicken to pan, cover, and simmer on low heat. After the chicken is cooked, finish the sauce by swirling in the remainder of the coconut oil.
Some of these recipes require the stove in your rv, others could be made using a camp stove.
Caribbean Grilled Pork Chops With Mango Salsa

Ingredients:
2 loin pork chops
Barbecue seasoning
1 ripe mango, peeled and diced
1 tbsp finely minced red onion
1/4 cup finely diced red bell pepper
1-2 tbsp orange juice
1 1/2 jalapeno pepper, finely minced
Method: Season pork chops and set aside. Combine the remaining ingredients and leave at room temperature until serving time. Barbecue over high heat and sear on each side, then reduce heat to medium and move chops away from the flame, close the lid and cook until done. (If you are lucky enough to have one of those complete camp kitchens or cooking stations, that could work great for this one.)
Pasta With Fresh Tomatoes, Basil And Parmesan
Ingredients:
4 coarsely chopped tomatoes
1/2 lb cooked pasta
2 tbsp vegetable oil or margarine
4 chopped green onions
3 minced garlic cloves
1 cup cooked chicken, turkey or ham
1 tbsp dried basil
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Method: Heat oil over high heat in a large pan or Dutch oven. Add onions, tomatoes and garlic. Cook, stirring for a couple of minutes until tomatoes are just heated through but hold their shape. Stir in pasta, cubed meat, basil and Parmesan. Lower heat to medium; cook for a couple minutes or until heated through, and season with salt and pepper. When its done, pile high on your plate, have a seat in your outdoor lounging chair and chow down!
Easy Macaroni Salad
Ingredients:
16-ounce box macaroni elbows
1 small onion
4 large eggs
1 cup celery
2 cups mayonnaise
1/2 cup sugar
2 tbsp mustard
2 tbsp apple cider vinegar
Method: Cook and drain macaroni, slice celery and onion and set aside. Boil and dice eggs. Mix other ingredients in a bowl and then combine everything together. Refrigerate before serving.
