Perhaps you are eating more meals at home during this current economic crises and you are looking for something a little different to add to your weekly menus. The following recipes are easy, inexpensive, and quite tasty. The Barbecue Country-Style Pork Ribs only takes a few minutes to prepare before going into the oven, leaving you time to finish your meal, set the table, etc while they bake. The Green Chilies and Rice dish is a favorite of Red Steagull, a famous Texas Cowboy. It may sound hot but really is only pleasantly warm which goes nicely with the sweetness from the barbecue sauce.


BBQ PORK COUNTRY-STYLE RIBS

3 to 5 lbs country-style pork ribs
2 cups catsup
1/2 cup water
2 tbsp Splenda Brown Sugar Blend (or 3 tbsp brown sugar)
1/2 cup chopped onion
4 tbsp Worcestershire sauce
1 tsp salt
1 tsp black pepper

Par-boil ribs until tender and drain. Mix remaining ingredients together in a medium saucepan and heat over low heat for about 10 minutes until sugar is melted and onion is softened. Place ribs in a baking dish and brush sauce over ribs. Bake at 375 degrees for about 45 minutes.

Note: This rib sauce is also good for baked hamburgers, steak, and chicken.


RED STEAGALL'S GREEN CHILIES AND RICE CASSEROLE

1 cup rice, cooked
2 cups sour cream
1 can (8 oz) chopped green chilies
1/2 lb Jack cheese, grated
salt & pepper to taste
paprika for garnish

Preheat oven to 350 degrees. In a large mixing bowl, combine all ingredients, except paprika, and mix well. Pour mixture into a greased 8 x 12-inch baking dish; sprinkle with paprika. Bake for 30 minutes. This is not hot; just pleasantly spicy.

Yield: 4 servings

NOTE: For those who don't know, Red Steagall is a true Texas cowboy and poet. He holds a Western Weekend every year in Fort Worth, Texas. Features include a Western cook-off, etc.
