Barbecue Zucchini - Is it Any Good? |

The first question we must ask is if Zucchini is a vegetable or a fruit? Well guess what it's a little bit of both! It belongs to the gourd family, as well as summer squash which is both a fruit and a veggie. One other thing to note is that it has seeds which makes it a fruit (it's a rule!). But it is always cooked as a vegetable whether its indoor baking or grilling or out on the BBQ.
Okay so to pick out your Zucchini find some medium sized ones because the small ones will burn easily and the large ones will take too long and wont cook right all the way through so find a few good medium sized ones (about 6 inches). Another reason we want this size is because we are going to be slicing these lengthwise and we want about 4 slices from each one.
1 lb. of Zucchini
4 T. of olive oil
1 1/2 tsp. of oregano, dried
1/2 tsp. garlic powder (never garlic salt)
1/2 tsp. fresh ground black pepper
2 T. of lemon juice
Salt to taste.
First thing you want to do is mix the oil, salt and pepper, garlic powder, and the oregano all together in a large bowl. Set it aside for later. Now slice the Zucchini's like I mentioned above lengthwise and try to get 4 slices out of each one. Now brush the slices with that mixture we just whipped up. Now before you go and throw it on the grill let it sit and marinate for about an hour or so while your meat is cooking up. It wont take very long for the zucchini to cook so you don't want to throw it on and take it off and wait another hour for the meat to finish while your zucchini gets cold. Once its ready throw the slices on the grill on medium heat for about 4 or 5 minutes on each side taking care to make sure the flames don't flair up and burn your zucchini. One last thing you may want to try when you pull these babies off the grill is sprinkle a little lemon juice on them as this will give it even more incredible flavor! I recently barbecue zucchini when I had some relatives visiting and I also sprinkled a little parmesan cheese on each one and man did they love that!
