Tailgating can be great fun but it can also be a disappointment if simple things go wrong. Here are some great ideas for keeping things on track.

1. Plan what you're going to need and what you're going to cook in advance; making sure that when you put things in the car you put those things you need last, in first, and those things you'll need first, in last.
Don't leave thinking
about things until the last
minute because you'll forget
things and when you realize your mistake you won't have
the kitchen in the next room;
Don't forget tables and chairs, crockery and cutlery,
condiments and sauces;
If using gas make sure you have a spare bottle;
Don't forget to put into the car those perishable items
like your meat or fish which you're keeping in the fridge
till to keep fresh;
Don't forget your grill and your charcoals or your burner
and your skillets or stockpots; and,
Don't forget the trash bags for waste disposal.
2. Ideally the day before you're set to depart:
The meal is going to be really important so buy really
good quality ingredients because whatever you might do
with the grill or with a great recipe you'll be disappointed
if the quality of the food you're starting with is poor;
If you are going to use fish or prawns buy therm fresh;
avoid frozen;
Prepare any meats or fish that might benefit from
marinating; the more you can do before you go the better;
Prepare your sauces you'll be using before hand so
you're not stuck for time;
Put the food you'll be taking in sealed containers
ensuring that you keep raw foods for cooking completely
separate from other food;
3. Make sure that where you plan to visit and more specifically where you plan to do your cooking that you are permitted to use grill or gas stoves; more and more often we're finding evermore restrictions.
4. When you arrive:
Take time to prepare things before starting cooking;
Be careful to ensure that your grill or stove on a level
sound base;
Set up a fresh food & your raw food preparation area keeping utensils separate for each;
Take care of food hygiene when tailgating:
Ensure that your food before cooking is kept chilled so as to avoid contamination;
Keep well apart uncooked raw foods from cooked foods or salads & vegetables that will be eaten raw;
Wash your hands before starting to handle foods and make sure that you wash them again when you move from your raw meats to the food you and you're going to eat fresh;
You'll be out in the real world and often times you can easily get distracted; keep focused on the work in hand and your preparation timetable
Take care to ensure that you cook your meats thoroughly; to help it is a good idea to have a meat thermometer to test the temperature inside the meat.
6. Finally:
Ensure you clean up well where ever you've cooked;
Extinguish the grill fire and take great care with the ashes immersing them in water before disposing of them; and,
Get rid of your waste appropriately or take it with you.
